Ingredients: Venison, Rock Salt Slab, Fire
Rock salt is another thing we take for granted but is so essential to our way of life. Nowadays we can create salt in laboratory settings pretty easily, but for most of humanity people either had to mine rock salt or evaporate it from seawater.
Salt is so important for the preservation of foods, as salt draws out and sucks up water, it reduces the chances of mold spoiling foods. That’s how aged meats are ok to eat even though they are sometimes months old, like prosciutto, my absolute favorite aged meat. I’ve also found that cooking directly on a slab of rock salt is pretty easy, I’ve cooked up venison that I’ve harvested on the rock salt, but my favorite so far is scallops.
